Latex mattresses are made from rubber — either natural latex harvested from the sap of rubber trees (Hevea brasiliensis), synthetic latex derived from petroleum-based compounds, or a blend of both. The material is processed into foam through either the Dunlop or Talalay method, then used as comfort layers, support cores, or both.
What makes latex fundamentally different from memory foam is its response to pressure. Memory foam is viscoelastic — it softens with heat and slowly contours around your body. Latex is elastic — it compresses under pressure and springs back immediately. When you move, latex moves with you. There's no “stuck in the foam” feeling.
Natural latex is also inherently breathable. The open-cell structure of rubber allows air to flow freely through the material, unlike the dense closed-cell structure of traditional memory foam. Latex is naturally resistant to dust mites, mold, and mildew — and in certified organic form, is one of the most eco-friendly mattress materials available.
Latex comes in several forms — each with distinct properties. Understanding the difference helps you choose the right mattress.
Harvested from the sap of rubber trees (Hevea brasiliensis). Naturally elastic, breathable, and biodegradable. The purest and most durable form — no petroleum-based chemicals.
A specialized process: latex is poured into a mold, then vacuum-sealed and flash-frozen before vulcanization. The result is a lighter, more consistent cell structure — softer, airier, and exceptionally comfortable.
The original latex process: liquid latex is poured into a mold and baked in one continuous pour. Sediment settles at the bottom, making Dunlop denser and firmer — ideal for support cores and those who prefer a more grounded feel.
GOLS (Global Organic Latex Standard) certified. Verified free of synthetic chemicals throughout the supply chain — from rubber tree to finished mattress. Carried by Harvest Green and Savvy Rest.

Latex is a natural fit for these three types of sleepers.
Natural and organic latex is one of the most sustainable mattress materials available. Derived from renewable rubber tree sap, biodegradable, and available in GOLS-certified organic form — latex lets you sleep well knowing your mattress didn't harm the planet.
Latex has an inherently open-cell structure that allows air to circulate naturally through the material. Unlike memory foam, latex doesn't require gel infusions or copper additives to sleep cool — the material itself is breathable. If you run warm at night, latex is one of the most naturally cool mattress options available.
Latex responds instantly to movement. Unlike slow-responding memory foam, latex springs back the moment you shift positions — making repositioning effortless. If you move frequently during the night, switch sleep positions, or get in and out of bed often, latex's responsive bounce makes every movement easier.
Natural latex begins as a milky white sap tapped from rubber trees (Hevea brasiliensis) — the same way maple syrup is collected from maple trees. Trees are tapped repeatedly over decades without being felled, making natural latex one of the most sustainable raw materials in the mattress industry.
The sap is then processed into foam through either the Dunlop or Talalay method, vulcanized for durability, and cut into the layers that go into your mattress. At every stage, natural latex can be independently certified — GOLS (Global Organic Latex Standard) certifies the latex itself; GOTS (Global Organic Textile Standard) certifies the fabric covers. We carry GOLS-certified mattresses from Harvest Green and Savvy Rest.

Nine manufacturers — from accessible blended latex to certified organic — all in our LA showrooms.
All-latex mattresses flex smoothly with adjustable base articulation — no internal coil structure means nothing to stress or warp. Head elevation, foot elevation, zero-gravity position — all work seamlessly. Pairing a latex mattress with an adjustable base gives you the responsiveness of latex plus the postural control of articulation. Every latex mattress we carry is adjustable base compatible.
Latex feels fundamentally different from memory foam and innerspring — and it's different enough that you should feel it before committing. At $699 to $7,899, this is not an impulse purchase.

A latex mattress uses foam made from the sap of rubber trees (natural latex) or from synthetic rubber compounds (synthetic latex), or a blend of both. The material is naturally elastic, resilient, and breathable — properties that give latex mattresses their characteristic buoyant, responsive feel. Unlike memory foam, which contours slowly in response to heat, latex responds immediately to pressure and springs back when you move. Latex mattresses are highly durable, naturally resistant to dust mites and mold, and — in natural or organic form — one of the most eco-friendly mattress options available.
For most people, yes — natural latex is superior in durability, breathability, and eco-friendliness. Natural latex comes directly from rubber tree sap and has a lifespan of 15–20+ years. It's biodegradable and sustainably harvested. Synthetic latex mimics the feel of natural latex using petroleum-based compounds (styrene-butadiene rubber). It's less expensive and more consistent in manufacturing, but doesn't match natural latex in durability or environmental profile. Blended latex (typically 30% natural, 70% synthetic) is a middle ground — more affordable than all-natural, more durable than all-synthetic. The brands we carry offer all three: blended options from Diamond, Restonic, and Englander; natural and organic options from Harvest Green and Savvy Rest.
Dunlop and Talalay refer to the two manufacturing processes used to create latex foam — both can use natural or synthetic latex as the raw material. Dunlop process: liquid latex is poured into a mold and baked. As it bakes, sediment settles toward the bottom, making Dunlop latex denser on one side and firmer overall. Dunlop is more durable and typically used for support cores. Talalay process: liquid latex is poured into a mold, then vacuum-sealed and flash-frozen before baking. This creates a more uniform, open cell structure — lighter, softer, and more consistent throughout. Talalay is usually preferred for comfort layers. Many high-end latex mattresses use Dunlop for the core and Talalay for the top comfort layer, combining durability with luxurious feel.
Yes — latex is one of the most naturally cool mattress materials available. The open-cell structure of latex foam allows air to circulate freely throughout the material, unlike the dense, closed-cell structure of traditional memory foam which can trap heat. Natural latex in particular is inherently breathable due to the organic properties of rubber sap. Additionally, many latex mattresses include pinholes through the foam layers to further enhance airflow. If you sleep warm and have been frustrated by memory foam's heat retention, latex is worth experiencing. You can feel the difference in person at any of our 5 LA showrooms.
Latex mattresses are among the most durable mattress materials available. High-quality natural latex typically lasts 15–20 years, significantly outlasting most memory foam (8–12 years) and innerspring mattresses (7–10 years). Organic latex (GOLS certified) from brands like Harvest Green and Savvy Rest can last even longer with proper care. Synthetic and blended latex have shorter lifespans — typically 10–12 years — but still outperform most foam alternatives. The durability of latex comes from its natural elasticity: it maintains its shape and resilience far longer than polyurethane-based foams, which break down and lose support over time.
Latex can be an excellent choice for back pain sufferers, particularly those who need a combination of support and pressure relief. Unlike memory foam's slow, deep contouring, latex provides buoyant support — it pushes back against your body weight, promoting proper spinal alignment while still relieving pressure at contact points. For back sleepers with lower back pain, a medium-firm latex mattress is often recommended. For side sleepers with hip or shoulder pain, a plush or medium latex provides contouring without the sinking feeling. The key advantage over memory foam: latex's instant responsiveness means you're never "stuck" in a position — it adjusts with you as you move. Our sleep specialists can help you find the right firmness at any of our 5 showrooms.
Natural latex is inherently resistant to dust mites, mold, and mildew — common allergen sources in traditional mattresses. However, it's important to distinguish: the latex foam used in mattresses is processed and vulcanized, which removes the proteins responsible for latex allergies (the same proteins in latex gloves). Most people with latex sensitivities can sleep on a latex mattress safely, though we recommend consulting a physician if you have severe latex allergies. GOLS-certified organic latex from Harvest Green and Savvy Rest undergoes rigorous testing to verify it's free from harmful chemicals throughout the production process.
Neither is universally better — they're fundamentally different materials suited to different sleepers. Choose latex if: you sleep hot and need natural airflow, you prefer a buoyant "on the mattress" feel rather than sinking "in," you're eco-conscious and want a natural or organic material, you move frequently during the night and want instant response, or you want a mattress that lasts 15–20 years. Choose memory foam if: you sleep with a partner who moves and want maximum motion isolation, you have deep pressure point pain (shoulders, hips) and want contouring, you prefer the cradled feel of slowly conforming foam, or you're on a tighter budget. We carry both extensively — and you can try them side by side in any of our 5 LA showrooms.
