Most people have never heard of them. Here's why they're the only certifications that actually matter.
What it covers: Organic cotton and wool — from the farm where the plants are grown through spinning, dyeing, manufacturing, and labeling.
What it requires: At least 95% certified organic fiber content. No toxic chemicals in processing. Third-party verification at every stage of the supply chain.
Why it matters: Without GOTS, a mattress labeled "organic cotton" may contain cotton grown with pesticides and processed with synthetic chemicals. GOTS means independent auditors have verified every step.
What it covers: Organic latex — from rubber tree plantations through tapping, processing, and manufacturing.
What it requires: At least 95% certified organic raw latex content. Strict limits on hazardous substances used in processing. Annual third-party audits.
Why it matters: "Natural" latex is processed with chemicals. GOLS latex is independently verified to be organic at every step — growing, processing, and manufacturing.
You spend 8 hours a night breathing next to your mattress. What's absent matters as much as what's present.
Conventional mattresses are primarily polyurethane foam — a petroleum-derived synthetic that off-gasses VOCs and degrades faster than natural materials.
Most mattresses use chemical flame retardants linked to health concerns. Harvest uses organic wool — a naturally fire-resistant material that meets fire safety standards without chemicals.
Commonly found in adhesives and synthetic foam treatments. Not used in GOTS/GOLS certified production.
Plasticizers often found in vinyl covers and synthetic materials. Absent from organic certified products.
That "new mattress smell" is volatile organic compounds escaping from synthetic materials. No synthetic foam means no chemical off-gassing.
Conventional cotton is one of the most heavily pesticide-treated crops. GOTS certification verifies organic growing — no synthetic pesticide residues.
You spend roughly 8 hours a night — one third of your life — sleeping directly on your mattress. No other piece of furniture has this level of sustained proximity to your body.
Los Angeles has some of the highest demand for certified organic sleep products in the country. We carry Harvest at all 5 of our LA showrooms so you can try before you buy.
If you've only ever slept on foam, latex will feel noticeably different. Here's what to expect.
Organic mattresses aren't for everyone — but for these sleepers, they're genuinely the right choice.
Natural latex is inherently resistant to dust mites, mold, and mildew — the primary triggers for mattress-related allergies. Organic wool acts as a natural moisture barrier. No synthetic chemical treatments means fewer irritants.
Children spend more time in bed proportionally than adults. GOTS/GOLS certification means no chemical flame retardants, no off-gassing, no synthetic pesticide residues next to developing bodies.
Natural latex has an open-cell structure that allows air to circulate continuously. Organic wool wicks moisture and regulates temperature. No synthetic foam means no heat retention. Ideal for the LA climate.
Multiple chemical sensitivity, fragrance sensitivity, or anyone who reacts to synthetic materials. GOTS/GOLS certification eliminates the chemical treatments, adhesives, and synthetic fibers that trigger reactions in conventional mattresses.
Natural latex will feel different on day 1 than it does at week 4. The latex core softens slightly and conforms to your body weight over the first 30–60 days. Give it time before making a final judgment — this is normal and expected with genuine organic latex mattresses.
Natural latex feels genuinely different from foam. You need to experience it in person. We carry Harvest mattresses at all 5 of our LA showrooms.

GOTS stands for Global Organic Textile Standard — the world's most rigorous certification for organic textiles. It covers the entire supply chain from raw fiber to finished product: organic farming, processing, manufacturing, labeling, and trading. Every stage must meet strict environmental and social criteria, verified by independent third-party auditors. GOTS certification on a mattress means the organic cotton and wool used are genuinely organic at every step — not just at the farm.
GOLS stands for Global Organic Latex Standard — the certification specifically for organic latex. It verifies that the latex originates from organically grown rubber tree plantations and is processed and manufactured according to strict environmental and health standards. GOLS certification requires at least 95% certified organic raw material content and limits the use of hazardous substances in processing. It's the only credible certification for genuinely organic latex.
"Organic" with a third-party certification (GOTS or GOLS) means the materials and processes have been independently verified against strict standards. "Natural" and "eco-friendly" are unregulated marketing terms — any manufacturer can use them without meeting any specific requirements. A mattress labeled "natural" may still contain synthetic foams, chemical flame retardants, and untested adhesives. When you see GOTS and GOLS certifications, you have independent verification. When you see only "natural" or "eco-friendly," you have only the manufacturer's word.
Minimal to none. Conventional mattresses use polyurethane foam, chemical flame retardants, adhesives, and synthetic fabrics that off-gas volatile organic compounds (VOCs) — that new mattress smell. Natural latex, organic cotton, and organic wool don't produce this kind of off-gassing. You may notice a faint natural rubber scent from the latex initially, which dissipates quickly and is not a chemical VOC. For chemical-sensitive sleepers and households with young children, this is a significant advantage.
Natural latex is responsive and buoyant — it pushes back against your body with a springy, floating sensation rather than slowly conforming and cradling. Memory foam sinks slowly and retains the impression of your body, which some sleepers find feels like being "stuck." Latex responds immediately when you shift position, making it easier to move during the night. Latex also sleeps significantly cooler than memory foam, which traps heat. Many sleepers who've tried both strongly prefer the feel of latex.
Yes — natural latex is inherently resistant to dust mites, mold, and mildew, which are the primary triggers for mattress-related allergies. Organic wool acts as a natural moisture barrier that discourages microbial growth. The absence of synthetic chemical treatments means there are fewer potential chemical irritants. For allergy sufferers, people with chemical sensitivities, or households with young children, organic latex mattresses are consistently recommended by allergists and pediatricians.
Natural latex mattresses typically last 15 to 20 years — significantly longer than synthetic foam mattresses, which average 7 to 10 years. The latex core maintains its shape and support characteristics without developing the permanent body impressions that cause synthetic foam to degrade. This longevity makes a higher upfront cost more reasonable when calculated on a per-year basis.
For side sleepers: choose a softer or medium option for pressure relief at the shoulders and hips. For back sleepers: medium-firm provides lumbar support without pressure points. For stomach sleepers: firm prevents excessive sinking at the midsection, which causes lower back strain. Natural latex feels different from foam at every firmness level — it's more responsive and less conforming. We strongly recommend trying Harvest mattresses in person at any of our 5 LA showrooms before deciding on firmness.
